Peppa Royale

BBQ for Katrina Refugees

Texas BBQ Rub, Gators Pits and Texas Pepper Jelly recently teamed up with BBQ enthusiasts from the Houston area to feed more than 2,000 people who were displaced by Hurricane Katrina. The BBQ was prepared and cooked at the Gator Pit facility in northwest Houston, then distributed to area shelters and churches.

The menu included brisket, pulled pork, sausage, ribs, fried fish, and red beans and rice. Nearly $6,000 in donations from businesses and individuals poured in to cover the costs of the supplies and food.

Making the BBQ sauce. Pork butts on the upright smoker. Getting ready to chop the brisket.
The brisket juice went into the BBQ sauce. Briskets being chopped up for sandwiches. Good looking brisket.
Adding the sauce. Trays of meat are loaded into the upright to stay warm. Frying up the fish.
Slovacek sausages are loaded into the Texas Legend. Time to slice the sausage. Everyone pitches in to help.
